Chorizo Sloppy Joes Recipe
Ingredients:
- Ground pork
- Chorizo (sweet or spicy based on preference)
- Brown sugar
- Brioche buns, toasted
- Oil for cooking
- Onion
- Seasoned tomato sauce
- Optional for topping: guacamole, sour cream
- Optional vegetables to sneak in: zucchini, cauliflower, sun-dried tomatoes, kale or spinach, eggplant
Instructions:
- In a pot over medium-high heat, brown chorizo and pork together with onions and oil until pork is mostly cooked through, about 5 minutes.
- Add seasoned tomato sauce, brown sugar, and any additional veggies as desired.
- Cook until the sauce starts to thicken, then remove from the heat.
- Optional Slow Cooker Method: Instead of cooking on the stovetop, after browning the meats and onions, transfer them to a slow cooker, add the remaining ingredients, and cook on high for 4 hours or on low for 8 hours.
- Toast the brioche buns with or without butter.
- Assemble the Sloppy Joes by scooping the meat mixture onto the toasted buns.
- Top with guacamole or sour cream before serving for extra flavour and to cool down the spice, if necessary.
Tips:
- Pork is preferred but ground beef or turkey can be substituted.
- Buttering and toasting the buns helps them hold up to the sloppy mixture.
- Prepare all ingredients beforehand as the cooking process is quick.
- Stop cooking the sauce as soon as it starts to thicken.
