Ingredients

- 2 tablespoons oyster sauce
- 1 ½ tablespoons brown sugar
- 1 tablespoon rice vinegar
For the Udon Stir Fry:
- A little bit of neutral oil
- 2 cups of stir-fried veggies (you can use about half of a bag of a frozen stir-fry veggie blend)
- Two 7-ounce packages of pre-cooked udon noodles
Finishing Touches:
- 1–2 cloves fresh garlic, minced
- A ton of freshly ground black pepper
Instructions
Sauce Preparation:
- Shake up all the sauce ingredients in a jar.
Noodles:
- Heat a nonstick skillet over medium-high heat.
- Add a swish of oil.
- Add the noodles and enough sauce to coat. Stir-fry until the noodles are well-covered and starting to caramelize. (Leaving them undisturbed for a minute or two will help achieve this effect.)
Veggies:
- Add the stir-fried veggies to the skillet. Pour a little more sauce over everything. You may not need to use all of it; the extra sauce can be saved for another use.
- Toss everything together for 2-3 minutes until the veggies are fork-tender and everything looks browned and sticky.
