- Salt & pepper, to taste
- ¼ teaspoon garlic powder
- Flour, for dredging
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
- ⅓ cup chicken broth
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 cup heavy/whipping cream
Instructions:
- Prepare the Chicken: Start by cutting the chicken breasts in half lengthwise to create 4 smaller cutlets. Season them with garlic powder, salt, and pepper, then lightly coat each piece in flour.
- Cook the Chicken: Heat the olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once the pan is hot, add the chicken. Cook the chicken pieces for 4-5 minutes on each side or until they're golden brown. If the oil begins to splatter too much, reduce the heat. After browning the chicken, remove it from the pan and set it aside.
- Make the Sauce: Remove the pan from the heat, then add the remaining butter, chicken broth, Dijon mustard, and honey. Put the pan back on the stove and adjust the heat to medium. Stir until the mustard is fully dissolved and the sauce is slightly reduced.
