Coconut Truffles Recipe
Ingredients
- 3 cups coconut flakes (sweetened or unsweetened)
- ½ cup condensed milk
- 12 ounces semi-sweet chocolate chips, melted
- 2 tablespoons unsweetened shredded coconut for sprinkling on top (optional)
Instructions
- Mix the Coconut and Condensed Milk: In a mixing bowl, mix together the 3 cups shredded coconut and ½ cup condensed milk.
- Form the Balls: Using a 1 tablespoon cookie scoop or a regular spoon, scoop the mixture and roll it into balls. Transfer them to a baking sheet lined with parchment paper and refrigerate for 30 minutes to 1 hour.
- Dip in Chocolate: Melt the 12 oz of chocolate chips. Dip the coconut balls into the melted chocolate and place them back on the baking sheet lined with parchment paper.
- Add Toppings: Sprinkle the tops with a little bit of shredded coconut (optional) and refrigerate again for about 30 minutes or until the chocolate is set.
Notes
- Refrigeration: We recommend to refrigerate the coconut balls before dipping them into the melted chocolate to prevent them from falling apart.
- Condensed Milk: The amount of condensed milk may need to be adjusted depending on the type of shredded coconut used. Ensure the coconut absorbs the liquid and is soft but not too soggy.
- Coconut: You can use either sweetened or unsweetened coconut flakes. Sweetened coconut may require less condensed milk to avoid excess sogginess.
- Chocolate: Both chocolate chips and regular chocolate are suitable for melting. Chocolate chips will create a thicker shell, whereas regular melted chocolate will provide a thinner shell.
Storage
- These coconut truffles can store in an airtight container in the refrigerator for about a week.
Enjoy your scrumptious and easy-to-make Coconut Truffles, a delightful no-bake dessert ideal for the holiday season!
