Caramel Rolo Fudge Recipe
Ingredients:
- 397g Carnation Caramel
- 600g white chocolate, chopped
- 350g Rolos
Instructions:
- Preparation: Line a tin with parchment paper. A 9x9” square tin is recommended for optimal depth, but an 8x8" will also do.
- Melt Chocolate and Caramel: Put the chopped white chocolate and all of the caramel into a heavy-based pan. Melt them together on a low heat, stirring often to prevent the chocolate from burning and to ensure the ingredients mix well. Alternatively, you can melt the chocolate in a large heatproof bowl, and then, once melted, beat in the caramel.
- Combine Rolos: Mix in ¾ of the Rolos quickly, then pour the mixture into the prepared tin. Smooth the top.
- Final Touch: Add the remaining Rolos, filling any gaps and gently pressing them into the fudge.
- Set: Allow the fudge to set in the fridge for at least 4 hours, though overnight is preferable for a firmer texture.
- Serve: Once set, remove the fudge from the tin and cut into 1” squares.
Notes:
- This fudge is softer by nature and will firm up slightly once cut and stored in the fridge.
- Store in the fridge in a tin for up to 2-3 weeks.
- You can easily halve or double the recipe; just note that the setting times may vary slightly.
